Don't Waste Those Potato Peels!!

While peeling potatoes this past Thanksgiving for mashed potatoes, Teach asked me to try something. We tossed the peels with some olive oil and sea salt and put them in the oven for 25 minutes. They came out crispy and tasty as he had expected they would. We ate them just like that but I bet they would taste delish dipped in a BBQ sauce or yogurt and salsa dip.

I will never toss potato skins again!
